Din Tai Fung, a Taiwanese restaurant chain specializing in xiao long bao (soup dumplings) has just opened in Bellevue’s Lincoln Square Mall. The restaurant chain is wildly popular in many parts of Asia, and the Bellevue store marks their 2nd entry into the USA. (Their first US restaurant was in LA.)
To the uninitiated, Din Tai Fung serves a variety of small Chinese dishes, including noodle soups, drunken chicken and vegetable side dishes. But the reason everyone comes here is the dumplings and steamed buns. Whether pork, shrimp, fish or vegetables, this place works magic once the dumplings hit the steamer.
I’ve been to Din Tai Fung in Taipei and Tokyo, so I know why they always have a line out the door. I haven’t made it to the Bellevue restaurant yet. In its opening week, 3 hour waits for a table were not uncommon, so either plan to wait, or hold off for a few weeks for some of the newness to wear off.
